"...because without beer...cocktails"

The Burgess

  • 1 oz. Genever (Bols, Young)
  • 1/2 oz. Brown Rum (Mount Gay)
  • 1/2 oz. Rye whiskey (Old Overholt)
  • 1/2 oz. Sweet red vermouth (Dolin)
  • 1/2 oz. Dry white vermouth (Cocchi Americano)
  • 1/2 oz. Triple Sec (Cointreau)
  • 3 dashes Angostura bitters
  • 2 dashes Peychaud bitters
  • Orange peel
  • Lemon peel

Stir together with ice in a mixing glass, pour into a chilled cocktail glass without ice. Express the oil of a lemon peel, and orange peel, skewer them together onto a cocktail pick as a garnish.

Inspired by Patrick Henry's "Give me liberty, or give me death!" speech that swayed The Virginia House of Burgress to declare American Independence. It was designed by Ted Haigh, for the 12 Bottle Bar.

Boston Whiskey Sour-NG

  • 2 oz. Rye whiskey (Rittenhouse)
  • 2/3 oz. lemon juice
  • 1/2 oz. simple syrup
  • 1 egg white
  • 2 dashes of Orange Bitters (Fee Brothers)
  • Orange slice
  • Maraschino cherry

Combine ingredients into a shaker tin, shake together without ice for 10 seconds. Add 6 cubes of ice, shake for another 10 seconds. Fill a cocktail glass with ice, pour the shaker contents into the glass. Garnish with a half slice of orange and a maraschino cherry. The excess cherry syrup will settle into the bottle of the glass.

The original ratio is 2:1:1 of Bourbon:Lemon:Syrup. However, the 2:1 ratio of Bourbon to lemon juice overpowers the whiskey, so it is instead set it to 3:1, allowing the whiskey to express itself. The ratio of 1:1 for lemon juice to syrup is more sweet. The ratio of 4:3 gives an equal balance of sweet and bitter. Finally, orange bitters is added to combine the orange and lemon citrus notes.

Lavender Lemonade

  • 1.5 oz. New World Gin (Hendrick's)
  • 1.5 oz. lemon juice
  • 1/2 oz. simple syrup
  • 1/4 Creme de Violette
  • 3 oz. Tonic water
  • Sprig of rosemary
  • Slice of lemon

Combine gin, lemon juice, syrup, and Creme de Violette into a tall Collins glass, stir for 15 seconds. Pour in tonic water, dip the bar spoon in and out for 10 seconds to combine. Garnish with a full slice of lemon, and a sprig of rosemary. Serve with a straw.


  • 2 oz. Bourbon
  • 1 oz. sweet red vermouth (Dolin)
  • 1/2 Grenadine
  • 1/4 lemon juice
  • 2 dashes of Orange Bitters (Fee Brothers)

Combine ingredients into a mixing glass, stir for 20 seconds. Strain into a chilled cocktail glass.

Porto Flip

  • 1.5 oz Port, red wine
  • 1/2 oz (3 parts) Brandy
  • 1 egg whites
  • Lemon slice

Combine ingredients into a shaker tin without ice, shake for 10 seconds. Add 6 ice cubes to the shaker, shake for 10 seconds. Pour into a chilled cocktail glass. Garnish with a slice of lemon.

Canadian Blood and Sand

  • 1.5 oz. Canadian Maple whiskey
  • 3/4 oz. Sweet red vermouth (Dolin)
  • 3/4 oz. Maraschino liquor
  • 1.5 oz. Sparkling Orange Juice

Maraschino cherry

Combine everything, except sparkling orange juice into a mixing glass, stir for 20 seconds. Strain into a chilled cocktail glass. Add the sparkling orange juice, use a mixing spoon to gently combine by dipping the spoon in and out for 10 seconds. Garnish with a maraschino cherry. While sipping, quietly wonder why Paul put maple whiskey into a Dewar's scotch bottle...

Smoking Hot Asadoorian

  • 1.5 oz. Old Overholt Rye Whiskey
  • 3/4 oz. Tobacco Liquor (See here The depicted liquor Apollo found on close-out, we can't seem to find it anywhere, please tell us if you find some!)
  • 1/3 oz. Fire Cider
  • Slice of lime

Add all ingredients and stir with ice. Drop in the lime and cherry and serve. This drink is spicy, really lets you know you are having a good cocktail. It smooths out as you drink it, likely due to the burning of your taste buds. Paul loves this drink, however its an acquired taste. This drink is original, developed by Apollo Clark, featured on Episode 415.

Paul like's his cigars, and I wanted to capture that in the drink. Interestingly, I did not include Islay scotch, wanted to let the fresh tobacco leaf flavor penetrate the spicy fire cider.

Old Fashioned Jack (French Martinez)

  • 3/4 oz. Maurin Quina
  • 3 dashes orange bitters
  • maraschino cherry
  • blood orange peel

Joff Me Off (Dirty Vesper)


  • 1.5 oz. Hendricks
  • 1/2 oz. Cold River Potato Vodka
  • 1/4 oz. Cocchi Americano
  • onion brine
  • 3 Cocktail Onions
  • twist of lemon

Hairy Larry

(Bonus) Smokey Nail on Fire


Smokey Nail on Fire - a "Rusty Nail" cocktail, but with Islay Scotch (Smokey Nail), with an added kick of Fire Cider spice:

  • 1.5 oz. Islay Scotch (Lagavulin, Laphroiag, etc.)
  • 1.5 oz. Drambuie
  • 1 oz. Fire Cider
  • PDT Sidecar
  • Sidecar
  • The SBAMBUPAOFUMS (Somewhere Between a Manhattan but using Port and an Old-Fashioned using Maple Syrup)
    • 2oz Bulleit Rye, 3/4oz Port, 1/4oz Grade B Dark Maple Syrup. Black Walnut Bitters

From the Production Crew

Cranberry Bog

  • 5 oz. cranberry juice
  • 3 oz. 1800 Tequila Silver
  • 1/2 orange, squeezed
  • 1/2 oz. lemon juice
  • 2 drops orange & juniper bitters (preferably on an ice cube)

Serve with orange slice.

Ginger Maple Gangbang


  • 6 oz. can Barritts Ginger Beer
  • 1 oz. Bird Dog Maple Flavored Whiskey
  • 3 oz. Gosling's Bermuda Black Rum
  • 1/2 oz. Spiced Smoked Orange Bang Candy

Shake in margherita mixer for frothy finish.

The Reaper


  • 6 oz. cola
  • 2 oz. Kern Irish Whiskey
  • 1 oz. Ararat Pradznichny Armenian Brandy
  • 1 oz. Crown Royal Maple
  • 1 oz. Old Monk XXX Rum
  • 1/2 oz. Giuseppe Vermouth
  • 3 drops Bittered Sling Malagasy Chocolate

It's terrifyingly good!™

Pomelo Pummel


  • 2 oz. Tito's Homemade Vodka
  • 3 oz. Trader Joe's Rio Red Grapefruit Juice
  • 1 pomelo slice, muddled
  • 3 drops grapefruit bitters
  • dash of raw sugar
  • pomelo rind twist

Muddle pomelo slice in 6 ounce glass. Sprinkle sugar on pomelo. Add ice cubes and pour bitters over them. Add vodka and juice. Garnish with pomelo twist. Get pummeled.

Scotland Yard

  • 3 oz. Luksusowa Potato Vodka
  • 5 oz. sparking water
  • 3 drops mint bitters
  • 1/2 freshly squeezed lime
  • 3 lime slices

Serve over ice.
